1. Perfection - Synonymous with John Boos
The John Boos (JB) 20 x 15 x 2.5 cutting board is a necessary addition to any home cook. I finally retired the one I had used for 25 years. It still looked good because I kept it conditioned......I just wanted a new toy. The other one went to Good Will so someone can get another 25 years out of it. I cannot imagine carving a roast without my JB. My Wusthof knives shred composite boards as well as cutting mats. According to the latest information I have read, composite boards harbor more bacteria.
2. Substantial cutting board.
The John Boos 20 x 15 x 2.5 cutting board is exactly what I've been looking for. I use it constantly. It is thick, will not move around on the counter while in use and has a deep channel which comes in handy when carving meat. The board is a permanent item on the counter. Love it!

Excellent board
Works very well, which is to say it does nothing when I use it. It just stays there, doesn't slide around, and doesn't show wear after a month of moderate-to-heavy use.
2.25 inch thickness seems to be about right to preempt warping and to give it the needed weight.
HINT: Before ordering, take your present cutting surface and raise it to the 2-1/4 inch height of this board, just to make sure you are comfortable with adding that extra height to your counter top. It makes a difference, but one that most people should adapt to easily.
Amazon fulfillment didn't do that great a job though. Mine came poorly wrapped, and with a resultant small dent.
7/26/2013 It's now 6 month later, and I am still very pleased with the cutting board. REMEMBER TO OIL IT REGULARLY, but no need to do so with the horribly over-priced Boos mineral oil.
