Zwilling J.A. Henckels Twin Cuisine 4-Inch Paring/Utility Knife

Bargain Zwilling J.A. Henckels Twin Cuisine 4-Inch Paring/Utility Knife
==================================================================

Twin Cuisine is the latest addition to the J.A. Henckels family of fine cutlery. This 4-inch parer/utility knife is one-piece precision forged, with excellent cutting retention, corrosion resistance, and an exclusive ergonomic handle design. The 4-inchOne of the newest premium lines from Zwilling J.A. Henckels, Twin Cuisine was introduced in 2004 with a major revelation: it's the first high-quality forged cutlery line to feature a molded handle with a visible, full-length tang that runs horizo...

  • Friodur ice-hardened blade made from high-carbon, no-stain steel
  • Molded ergonomic handle without rivets or gaps for ultimate comfort
  • Made in Germany; wash by hand; lifetime warranty

This Paring Knives give to us some advantages, like this :
1. a great, great knife
I really love this knife, especially the handle. It form fits into my palm and has a decent satisfying heft to it that some of my larger chef's knives just don't have. When I'm looking for a knife, I'm looking for this one every time. It's also managed to keep a good edge for quite a long time. I think you'll be happy if you buy this one, and if you're like me, you may even want to replace all of your knives with this line. Can't recommend it highly enough.

2. Excellent Professional Knife
I have older (1996) Henckels Twin Star knives. They were the first knives to feature the one size ergonomic handle regardless of blade length. Awesome handle, but these knives also featured ceramic coated blades that do not need sharpening. They were the best knives at the time of purchasing and also wildly expensive. After 12 years of commercial/home use these knives are still sharp but I still don't like them...nobody does and that's why they don't make them anymore. But the handle was amazing and is still used in top of the line Henckels knives.

The Twin Cuisine line is the best knife by Henckels except for the Twin Select which is basically the same (same price) except for a complete stainless handle, and the Twin Cermax which is a special Iron Chef edition that is for the Rich chefs with rich pockets. I'm talking $250/knife here. It's the Rolls Royce Limited Edition of knives...nobody will be buying these.

My paring knife tip broke off because the...

Nice knife, very substantial
This is a great knife, after trying many paring knives I chose this one. I love the way it has a full size handle, most of my knives are from Shun but their paring knives have handles that are too small and uncomfortable to me, whereas in this series the handles are all nearly the same size.

Also this knife has considerable heft for a paring knife, all of the knives in the twin cuisine series are quite heavy, with much of the weight stemming from the full tang handle. In the case of the paring knife I think this is great, but I think it throws off the balance of some of the larger knives such as the chefs knife and santoku of this series. But of course knife preference is very subjective so I would recommend feeling and trying them out in person.

Bob Kramer 10" Carbon Steel Chef's Knife

Buy Bob Kramer 10" Carbon Steel Chef's Knife
==================================================================

34941-263 Features: -10'' Carbon Steel Chef's Knife.
  • Zwilling J.A. Henckels Bob Kramer Euroline Carbon Collection Chef's Knife
  • High carbon stainless steel
  • Brass bolster
  • Ergonomic, triple riveted African blackwood handle
  • Ideal for everyday cutting and slicing tasks

This Paring Knives give to us some advantages, like this :
1. Amazing Knife.
This knife stands alone in combining incredible blade design, balance, fit and finish, with a carbon steel blade that is easy to sharpen to a razor sharp edge. Zwilling and Kramer have got the heat treatment down because this knife holds a long lasting edge. Bob Kramer has designed a fantastic chef knife here. I think that Zwilling has carried through on Kramer's design and produced an exceptional chef knife. It is in a class of its own.

I routinely cut through bone with the sturdy heal but, the tip is thin and works well for delicate cutting. I end up not reaching for other knives because this knife is such a good all around chef knife. It has not been prone to chips and it takes well to the stones. This knife is a versatile work-horse. Mine has taken on the most beautiful patina with some hints of blue. Beautiful knife.

2. No1 all-purpose knife!!
If you need only sharpness on kitchen knife,
you should buy a japanese knife that is made of yasuki-hagane.
(For instance, if you are going to cut a tuna for sushi)
But If you want useful one ,I recomend you Bob Kramer.

In my opinion,Bob Kramer-henkel has two strong points.

Point 1
Is made of 52100 steel.
This steel was developed for bearings,so very high quality and will last long time.
(Of course,you should avoid stain)

Point 2
Has good shape and weight balance.
For instance, the center of gravity is in the border between blade and handle.
So, you can rotate easily and utilize the weight in cutting.
And long distance from edge to spine is useful to avoid touching your hand on the things cut.

In addition,
My knife was shparpend to clear Bob's 5 test in the factory.
But If you can hadle a japanese natural water stone, you can get more sharp edge.

At last...
This good...

not that great
this knife is not that great. no better than my calpholon katana chef knife. this is not a bob kramer knife. henkles is authorized to use his name and they make it. a real kramer knife is $300. per inch so this would be $3000.00 if you bought it from him. i didnt realize this till after I got this knife. it's not bad but nothing special about it over any other high quality knife. I still want a set of real kramer knifes but it will be a long time.

Shun Premier Paring Knife, 4-Inch

Bargain Shun Premier Paring Knife, 4-Inch
==================================================================

Shun Premier Paring Knife, 4-Inch
  • Handcrafted paring knife traditionally used for slicing and coring, as well as adding decorative touches to vegetables
  • Features layered Damascus steel with a striking, hand-hammered finish (known as 'Tsuchime' in Japanese)
  • Hand-hammered finish reduces drag when cutting, keeping foods from sticking to the knife blade; Premium pakkawood handle allows for a comfortable and secure grip
  • Due to the handcrafted nature of this knife, blade length can vary from 3-3/4 inches to 4 inches
  • Dishwasher safe; hand washing and air drying recommended; limited lifetime warranty

This Paring Knives give to us some advantages, like this :
1. Extreme satisfaction followed by extreme dissapointment.
This is a gorgeous knife. As soon as it arrived I was in awe of it. I also love the handle, it fits in the hand very well, and lets you grip outside of the danger zone of the backside of your knife. The blade is razor sharp, I have no doubs that a fast swing could cleanly remove a finger (bone included).

Now to the dissapointing part of this knife. After only having the knife for about a week, I was cleaning it and tapped the side of my sink. Not hard, not even enough to make me take a second look at the knife. Then when I put it up I saw it, the tip bent, not bad, but enough to notice. Having a lot of experience with knives, I just kind of frowned and give it a light push back into place. With almost no force applied the tip snaps off. Now I'm officially upset, for a knife of this price I expect much more. Again, I shrug it off becaause it's nothing I can't have ground down. Now I'm treating the knife with kit gloves, not even so much as washing it with a rough sponge...

2. simply the best
The search is over for the finest pairing knife available. This knife is a work of art and unsurpassed for razor sharp usage. A true work of art.

  • Hammered "tsuchime" finish creates air pockets for natural food-release, reducing knife drag

  • Knives are hand-crafted featuring ultra-sharp 16 degree cutting edges; widened bolster shape encourages proper grip and reduces forearm fatigue

This Paring Knives give to us some advantages, like this :
1. Great knife
Great for slicing. I am not as comfortable using for peeling as with smaller knives, but still often my first choice for many tasks.

2. Amazingly sharp, to the "point" of being dangerous
Superb knife for paring purposes and general small-scale kitchen work. But seriously, you need to get used to a knife this sharp, especially with a point this extreme. Do keep away from the reach of children. Unlike most ceramic knives with rounded points, this one will literally cut you the first time you use it. Arguably not for the amateur chef, but I suspect the typical user will soon become accustomed to the fact that even the most ordinary handling error will draw blood! Otherwise: build quality, edge, fit to the standard chef's hand--really outstanding, and worth your investment.

A good knife
Very comfortable knife. Kind of grows on you. The edge will likely improve with wear. For now the edge is too even to allow for much serration. Definitely recommend.

Shun DM0700 Classic 3-1/2-Inch Paring Knife

Bargain Shun DM0700 Classic 3-1/2-Inch Paring Knife
==================================================================

A member of the stylish Shun Classic line, this durable paring knife deftly handles intricate dicing and trimming tasks alongside its requisite peeling and skin-removal role. The paring knife’s compact size makes it easy to handle and thus a favorite when control and precision are a priority. The tool features a narrow sloping blade measuring 3-1/2 inches in length with a piercing tip. Leveraging a 90-year history of superior workmanship, Shun knives are precision-forged in Japan by renowned ...
  • 3-1/2-inch Japanese paring knife; ideal for peeling, paring, or chopping
  • Precision-forged high-carbon stainless-steel blade; holds a razor-sharp edge
  • Clad with16 layers of stainless steel to produce a rust-free Damascus look
  • Durable D-shaped Pakkawood handle; comfortable offset steel bolster
  • lifetime warranty; manufactured in Seki City, Japan

This Paring Knives give to us some advantages, like this :
1. Great knife ... but not worth the price
Let me first say that the Shun knives, including the 3 1/2 in paring knife, are fantastic. They are the sharpest kitchen knives around and hold an edge very well. The craftsmanship and quality are also extremely good.

However, a $45 paring knife does not make sense unless price is no object for you. You can get a Forschner 3 1/2 inch paring knife (rated number 1 by Cook's Illustrated) for $4.95, a tenth of the cost of this knife. As an owner of both knives, I can say that the Forschner is almost as sharp as the Shun and more comfortable to hold. Certainly the Shun is not 10 times as better as the Forschner.

It should also be noted that the prices on all the Shun knives have gone up after Alton Brown started promoting them. This paring knife was $30 a year ago when I bought it.

In summary, if price is no object for you and you want the best paring knife you can get, buy this knife. Otherwise, I would think twice before making this purchase.

2. Shun Knives are Beautiful, Elegant, and the Sharpest around
I have a whole set of these blades, so I'm breaking down my review to two parts: Review of the Shun Classic Blades, and the portion as it pertains to this knife in particular.

I absolutely love this knife and it's my second most used knife. My first most used is my work horse, the Shun Ken Onion 8" Chef's Knife. There are many small tasks that the Paring Knife is a must for though, and that's when I grab this one. When you want to trim a nice piece of meat, rib a green pepper, etc...you don't want a big knife, you need this little one. It's little, but so sharp that it slices through anything like butter, making prep work so easy and enjoyable.

Shun knives are beautiful creations period. Since I'm Asian, I love the tradition look and feel of this Japanese knife. I love the beauty of the blade and the dark, polished, Pakkawood handle. The unique "D"-shaped, Wood handles are preferable. The shape fits my hand perfectly, and the wood does not get slippery when...

This Paring Knives give to us some advantages, like this :
1. Exceptional set
Summary
-------
Advantages:
1) The sharpest commercial knife you can purchase
2) Will hold its edge much longer than carbon or stainless steel knives
3) Great ergonomics (nice handle and beautiful appearance)

Disadvantages:
1) Brittle blade
2) Can only be sharpened by the manufacturer

Overall:
Buy this set

Detailed information and advice:
--------------------------------
A bit of background information if you are unfamiliar with ceramic knives. There are basically three types of knives you can purchase:

1) High stainless steel knives - Fairly sharp, hold their edge well, somewhat difficult to sharpen. These are the knives that you are most likely to purchase at a store. Prices range from very cheap to very expensive (I own a Wusthof set, so I know how expensive they can get).

2) High carbon steel knives - Very sharp, dull easily, easy to sharpen. These are the cheapest, easiest to...

2. Sharp doesn't even begin to describe the edge
Be very, very careful. These are the sharpest knives I have ever dealt with. I have used it for fish, vegetables, boneless meats, and cheeses. You can make cuts as thin as you want, and the consistency of the cut is amazing. This set is a good introduction, and I am so happy with it that I plan on getting some of the other knives over time. The knives cut well and are very easy to clean...what else could you want?

Need more appointment... ?
Love the blades hate the handles
I bought this set and the chef's knife. All three cut like a dream. I still am a little too cautious of the ceramic blades. And I don't leave them out due to my fear that someone will carelessly use them on my granite counter tops or use them to pry, twist, or in some other way use and destroy them. When I cook and have friends over they will be conversation items as some of my fiends are equally adept in the kitchen. So why the four star rating. The blades are great, but the light weight, plastic molded handles with an obvious mold seam, look and feel cheap. For the price and the blade quality why are the handles pieces of poorly molded/trimmed plastic? Love the blades, but really hate the handles

This Paring Knives give to us some advantages, like this :
1. Shun Knives are incredible!
I bought this knife to complement the rest of my selection that I have been purchasing one knife at a time. I had tried Wustoff, Henckels, and Global before settling with Shun knives. I am a culinary student at the art institute and was turned on to Shun knives by my chef instructor who gave me a lead on certified Shun Dealer. I fell in love with these knives the first time I tried them. I knew I wanted the 2-1/2 inch bird's beak knife, which is why I decided on the 4" paring knife instead of the 3-1/2". If you are not pursuing the bird's beak knife then the 3-1/2 inch paring knife is great. Also, if you own any Shun knives, make sure you get the Shun Honing Steel with the built in angle. Shun knives retain their sharpness longer than other knifes in this category because they are fabricated with a smaller angle to make the blade than their competition. Most knives form a 45 degree angle to make the blade with two sides at 22.5 degrees each. However, Shun forms their blades with 16...

2. One knife does it all (or most of it)
I own three knives: a Shun 8" bread knife, a German 9" chef knife, and this one. This is only one of the three I seem to use day in and day out. It's incredibly sharp, incredibly comfortable to hold, and is the perfect utility piece. I see no need to own a knife block full of specialty blades you'll never use. If you're just starting your set, start with this one. Highly recommended.

An outstanding and beautiful paring knife!
I recently purchased this Shun 4'' paring knife along with Mac 8'' chef's knife and a Global 5-1/4'' santoku, and this knife is every bit as sharp as the more expensive Mac and Global brands--scary sharp, in fact. Plus, the Damascus style steel is simply a work of art. I've used this knife for everything from apples to mushrooms to green onions, and it moved through all of them effortlessly and without damaging the food. I sharpened it recently--not that it needed it really but just because I wanted it as good as when it came--and it regains its original edge in a just a few swipes across a ceramic steel. Finally, the handle I think is the most comfortable of all the knives I purchased, long enough to fit easily in your hand but not so big that it reduces functionality. While Shun knives are certainly becoming very popular in the U.S., it's popularity well deserved, and this knife has found a busy role in my kitchen and was worth the extra cost over its inferior competitors. I'm...
